This easy keto salad bowl is inspired by a bacon cheeseburger with all the toppings. It captures the essence of a cheeseburger like the Big mac without the bun. The protein packed ground beef and bacon make this low carb salad worthy of a meal. 

Instead of a bun, this low carb salad starts with a fresh layer of crunchy iceberg lettuce with chopped pickles, diced onions, shredded cheddar cheese, and sliced tomatoes, topped with lightly seasoned ground beef, and crumbled bacon. Drizzled with a dead simple 4 ingredient dressing that resembles a classic burger sauce, every bite of this 20 minute low carb salad bowl is packed with flavour.

Keto Cheeseburger Salad Variations

Chicken Burger bowl – Replace the ground beef with ground chicken or turkey.

Buffalo chicken burger bowl – Use ground chicken, and add crumbled blue cheese and drizzles buffalo hot sauce. 

Add more toppings – Use any of your favourite burger toppings, sliced jalapenos, hot peppers, peameal bacon, caramelized onions, sesame seeds, sautéed peppers, red onion, blue cheese, sautéed mushrooms, avocado, goat cheese.

Change up the dressing – Adding a variety of different spices and seasonings to the dressing can make a big impact. Try adding some smoked paprika to make it taste more like Big mac sauce.

Keto Big Mac Salad is Easy to Meal Prep

  1. Precook the ground beef, and bacon, allow it to cool and top with grated cheese. 
  2. Chop the lettuce, onions, pickles, tomatoes and combine. 
  3. Prepare the dressing.
  4. Store each of these three items in separate containers and combine before eating.

Ingredients
 
 

  • 1 pound ground beef
  • salt and pepper
  • 8 slices bacon
  • 8 cups shredded lettuce ice berg, romaine, etc.
  • 1 cup cheddar cheese shredded
  • 4 medium dill pickles diced
  • 1 large tomato or about 20 grape tomatoes
  • 1 small onion finely diced

Burger sauce dressing

  • ½ cup mayo
  • 2 tablespoon mustard yellow or Dijon
  • 1 tablespoon pickle juice
  • 1 large dill pickle finely diced
  • 1 tablespoon fresh dill or ½ teaspoon dried
  • ½ teaspoon smoked paprika optional
  • salt and pepper

Instructions
 

Cheeseburger Salad Dressing

  • Add the mayo, mustard, pickle juice, finely chopped dill pickle, chopped dill, smoked paprika is using, and season with salt and pepper. Stir to combine and set aside. The longer it sits the more the flavours improve.
    1 small onion, ½ cup mayo, 2 tablespoon mustard, 1 tablespoon pickle juice, 1 large dill pickle, 1 tablespoon fresh dill, ½ teaspoon smoked paprika, salt and pepper

Cheeseburger Salad Bowl

  • Cook the bacon. Cook the bacon in a pan over medium-high heat or in the oven at 400°F until crispy. Remove the bacon and allow to cool slightly before chopping or crumbling into small pieces.
  • Brown the ground beef. Add the ground beef to a skillet over medium heat. Season with salt and pepper and cook until browned. Cook in the bacon drippings and brown the ground beef until it starts to get a little crispy like the outside of a burger for added flavour and texture. Set aside.

  • Assemble the salad bowl. In each salad bowl place a bed of chopped lettuce, and top with shredded cheese, onion, sliced pickles, tomatoes, crumbles ground beef, bacon, and any of your other favourite burger toppings. Drizzle the burger sauce evenly over each salad bowl and toss to combine before serving.

Notes

Optional Ingredients: Adding smoked paprika or a small amount of ketchup tot he burger sauce will bring it closer to McDonalds Big Mac sauce. 
Any of your favourite burger toppings can be added to this salad bowl.

Using fattier ground beef and increasing the amount used can make this salad perfect for OMAD and IF. 
Leftovers: Store leftover sealed in the fridge for use within 2 days. 
For longer term storage and meal prep store the meat, sauce, and salad ingredients in separate containers and combine before eating.
