Easy Mini Pizzas Recipe (Low Carb | Keto)

Mini fathead pizzas are simple and quick low carb treat that will bring back childhood memories. Share this keto friendly snack with the whole family during game nights, pot lucks, parties, or an afternoon snack!

Fathead Dough

Pizza Toppings

  • 4 tablespoon Tomato paste
  • cup Cheese shredded
  • 1 oz Mini Pepperoni see notes

Instructions
 

  • Preheat the oven to 400°F [205°C].
  • Melt the shredded cheese and cream cheese. In a microwave safe bowl, add the shredded cheese and cream cheese. Cook in the microwave on high for 60 to 90 seconds until the cheese has melted.

  • Mix in almond flour and baking powder. Add the almond flour, baking powder, and Italian seasoning (optional) to the melted cheese and combine well.

  • Mix in the egg. Add the egg to the dough mixture and combine well. The dough should have a playdough like consistency. Add additional almond flour as needed to get the consistency right.

  • Divide the dough and form the crusts. Divide the dough into 6-8 roughly equal portions and roll each into a ball. Form the crusts one at a time by sandwiching the doughballs between two pieces of parchment paper and flatten with your hands or a rolling pin until they are about 1/4 inch [6-7mm] thick. Peel back the top layer of parchment and pinch the edge with your fingers to form a crust.
  • Pre-bake the crusts. Space the formed crusts out on a large parchment lined baking sheet and bake at 400°F [205°C] for 8-10 minutes until the crust begins to firm up. Remove and let cool before topping.
  • Heat oven to 425°F [220°C]
  • Sauce and top each pizza. Spread your chosen sauce over each of the crusts, top with your favourite low carb toppings, and more cheese.
    4 tablespoon Tomato paste, 1 oz Mini Pepperoni, ⅓ cup Cheese
  • Bake the pizzas until the cheese is melted. Put the topped pizzas back in the oven to cook for 8-10 minutes or until the cheese is melted and starting to brown. Remove and set aside to cool slightly before serving
  • Enjoy!

Notes

Nutritional information is for 1 mini pepperoni pizza. For complete accuracy always use a nutritional calculator such as the free one from Cronometer and enter the actual ingredients and amounts used. 
Coconut flour can be subbed for the Almond flour however you'll need to adjust the amount to get the right consistency. Coconut flour will give your pizza a slight coconut flavour and the crust will be a bit more crumbly. 
Cheese: traditionally fathead dough uses mozzarella cheese, however you can absolutely use any grated cheese you like. 
Mini Pepperoni: To get mini pepperonis, you can slice normal size pepperoni into quarters, or use pepperoni sticks (the kind you snack on) and slice them thin.  
Add the egg after mixing in the almond flour to prevent the egg from scrambling and cooking in the hot cheese.
Leftovers: Store leftover sealed in the fridge for up to 1 week.
Reheating: Reheat on a baking try in a 375°F [190°C] oven until the cheese has melted.
