Low Carb Strawberry Mojito Cocktail

This low carb summer cocktail features the bright natural flavours of summer strawberries and fresh picked basil. Made with my very own low carb strawberry simple syrup, this low sugar alcoholic beverage is best enjoyed poolside!

  • cocktail glass

  • 4 leaves fresh basil torn in half
  • 1 tablespoon lemon juice
  • 4 oz low carb strawberry simple syrup
  • 1 ½ oz dark rum
  • 5 oz soda water/sparkling water
  • 2 whole strawberries sliced for garnish


  • Add 3-4 fresh basil leaves to the bottom of a cocktail glass, since basil leaves are generally larger than the mint leaves used in traditional mojitos, I like to tear them in half or quarters so there isn’t huge leaves in my drink. Add a splash of lemon juice and using a muddler or a spoon crush up the basil slightly to release flavour
  • Add 4-5 oz (1-2 fingers) of simple syrup to the glass, it will of course depend on how sweet you would like your mojito. The syrup itself is very low carb at only 2g net carbs so feel free to sneak in a little extra if you have a sweet tooth.
  • Add 1 ½ oz of dark rum or rum of choice and fill the remainder of the glass with sparkling water/club soda and ice. garnish with fresh cut strawberry, basil, and lime slices. Enjoy!
