A low carb summer salad of thinly sliced fresh cucumbers, onions, and herbs in a creamy yet light tasting dressing. Ready in minutes, this keto friendly vegetarian side dish is perfect for picnics, BBQs, potlucks, or as part of a low carb dinner.
Remove the tip and tail of each cucumber and taking your time with a large knife, slice the cucumber into thin disc like slices. Slice the onion into thin quarter slices and add everything to a large salad bowl.
Make the Dressing
Add the mayo, sour cream, vinegar, lemon juice, garlic, dill, and parsley to a bowl and combine well. Season to taste. I like to make the dressing separately so I can choose how much I want to add but you can make it right in the salad bowl.
Add desired amount of dressing to the salad bowl and toss to coat the cucumber and onions.
