Mashed Celeriac (Low Carb)

Creamy celeriac mash is the BEST low carb replacement for mashed potatoes. This perfect keto friendly mash is rich, buttery, and full of flavour. An easy to make low carb side dish ideal for your holiday table or weeknight meals paired with turkey, roast beef, steak, meatballs or fried chicken. If you love mashed potatoes, you will love this keto friendly celeriac mash.

  • 2 pounds celeriac about 2 large celery root
  • salt
  • cup heavy cream
  • ½ cup butter salted
  • fresh thyme to garnish

Instructions
 

  • Prepare the celeriac. Wash the celeriac thoroughly to remove any dirt. Remove the lower portion of fine roots with a sharp knife. Using a vegetable peeler or knife, remove the thin brown skin. Cut the peeled celeriac into large 1-2 inch [2.5 - 5 cm] cubes.

  • Boil the celeriac. Bring a large pot of heavily salted water to a rapid boil and add the cubed celeriac. Boil for 10-12 minutes until the celeriac is fork tender, and drain into a colander.

  • Mash the celeriac. Add the celeriac back to the pot and use a potato masher to break down the chunks of celeriac into a coarse mash. Next puree the mashed celeriac to a smooth consistency using an immersion blender or by adding to a food processor.
  • Cook down the pureed celeriac. Place the pot of pureed celeriac over medium-low heat and add the heavy cream. Cook, stirring occasionally for 5-10 minutes until the celeriac thickens. Add the butter and cook again until the desired consistency is reached. The heat should be low enough to avoid browning the celeriac. Season with salt and pepper, and garnish with fresh thyme before serving.

Notes

Using an immersion blender or a food processor is necessary to get the smooth potato like texture in this mash. A potato masher alone will not suffice. 
Leftovers: Store leftovers sealed in the fridge for use within a week. 
This recipe can easily be meal prepped and made ahead of time in preparation for a holiday meal.
Reheating: Reheat in a pot on the stove over medium-low heat with additional butter if necessary. 
You can also reheat in the microwave.
