A strawberry infused low carb simple syrup flavoured naturally with fresh cut local strawberries. Perfect for low carb cocktails, mixed d rinks, desserts, cheesecakes, waffles, and pancakes.
Heat water in a pot over high heat until boiling and stir in equal amount of monk fruit/erythritol sweetener until dissolved.
Thinly slice fresh strawberries or other low carb fruit and add to the simmering pot. Simmer off water until he syrup begins to thicken and the liquid has turned red (if using strawberries), about 3-5 minutes of rapid simmering.
Strain the solution through a mesh strainer and lightly press any remaining liquid out of the pulp with the back of a spoon. Transfer syrup to a mason jar to cool and store sealed in the fridge for up to 2 weeks.
Notes
The actual amount of water you use does not matter as long as you use equal parts sweetener by mass or volume. A 1:1 ratio of water to sweetener
I have only tried this with Erythritol, monk fruit, and xylitol with success, other sweeteners may work but you will need to experiment.

Low carb fruit such as berries will work best for flavouring simple syrup
The leftover fruit pulp can be frozen and used as a low carb treat for topping yogurt, waffles, desserts, etc.
